Mint Covered Cookies

Mint Covered Cookies Ingredients


1-1/4 cup flour

1/2 tsp baking soda

2/3 cup packed brown sugar

6 tbsp oleo

1 tbsp water

6 oz semi-sweet chocolate chips

1 egg

Mint Covered Cookies Cooking Instructions


Stir flour and baking soda together.

In medium pan, heat and stir brown sugar, oleo and water on low heat until margarine is melted, add chocolate chips.

Heat and stir until chocolate is melted.

Transfer to large mixing bowl and let stand until cool 10 to 15 minutes.

Then beat in eggs and stir in flour mixture until mixed.

Refrigerate until chilled.

Make 1 inch balls, place 2 inches apart on ungreased cookie sheet.

Bake at 350 degrees at 8 minutes.

Put mint on tops (upside down), put back in oven for 2 minutes.

Take out of oven and spread mint with knife to cover top of cookie.
