1 Cup light brown sugar
2 Cups white sugar
4 1/2 Cups white flour
1 1/2 tsp. salt
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 Cups shortening
4 large eggs
3 1/2 ripe bananas, mashed
2 tsps. vanilla
1 1/2 Cups chopped or slivered walnuts
1 Cup drained and chopped maraschino cherries
1 1/2 Cups drained crushed pineapple
1 Cup white chocolate chips
1 Cup milk chocolate chips

Preheat oven to 350 degrees. Mix all dry ingredients together thoroughly. Mix both the light brown sugar and the white sugar into the shortening; add eggs and vanilla. Fold the shortening mixture into the dry ingredient mixture. Add the bananas, crushed pineapple, walnuts, cherries, and both types of chocolate chips. Make sure that you have thoroughly combined all of the ingredients.
Drop by teaspoonfuls onto a cookie sheet lightly sprayed with non-stick cooking spray.
Bake at 350 degrees for 12 to 14 minutes. Makes about 4 dozen cookies.
