bacon and egg potato boats Ingredients


potatoes baked.( as many as you need to feed your family)



butter



milk



shredded itailian blend cheese (or any cheese you like)



green onion



bacon



salt


bacon and egg potato boats Cooking Instructions


preheat oven to 400 degrees.



spray baking sheet



after potatoes cool,



cut in half lengthwise



 scoop out pulp into a bowl and mach with fork.



. for each half potato add 1 Tbsp. butter,



stirring till melted



 1 Tbsp. milk,



1Tbsp. cheese,



1/2 Tbsp chopped green onion



 cooked bacon and 1/4 tsp. salt.



stir well.



scoop back into skins.



with the back of a spoon, make a deep well.



place on baking sheet.. crack one egg into each well.



sprinke with salt and pepper.



bake 35-40 minutes till egg whites are set



.sprinkle with finely shopped bacon or parsley.



you can switch it up substutuing different cheeses or ham in place of bacon
