Filipino Seasoned Pork Appetizer

2 lb pork fillet or lean boned loin of pork
3 to 4 cloves garlic, chopped
1/3 cup cider vinegar
1-1/2 tsp salt
1/8 tsp freshly ground pepper
2 bay leaves
Oil if necessary

Slice the pork into bite-size pieces; place in skillet.
Add the garlic, vinegar, salt, pepper, bay leaves and enough water to barely cover meat.
Bring to a boil and simmer, uncovered, until the water has evaporated.
Continue cooking to brown the meat, adding a little pork fat or oil if necessary
Yield: eight servings.
